High Protein Healthy BuckEyes

One of my favourite combos is chocolate and peanut butter. But since I can’t eat dairy, or most nuts, I don’t often get to have that pristine flavour combo. But in true Angie fashion, I stepped outside the box a little and came up with these Paleo, high protein, sun butter bites — that taste just like a buck eye !

Ingredients:

  • 1 cup sun flower seed butter

  • 1/3 cup pure maple syrup

  • 1 tsp vanilla

  • 1 pinch pink himalayan salt

  • 3 scoops Vital Proteins Vanilla Coconut Collagen Whey

  • 2 bars Dark Chocolate

  • 2 tbsp coconut oil

Recipe:

  1. Mix together all ingredients except chocolate and oil until smooth. Using an tbsp scoop out batter and form small balls, place on parchment lined tray. Freeze for 20 mins.

  2. In a double boiler, melt down chocolate and coconut oil, set aside.

  3. Remove tray from freezer, roll each scoop of batter into a smoother ball if needed, dip in chocolate with fork to coat completely and place on tray.

  4. Freeze for 1 hour, enjoy!

  5. Store in fridge or freezer for up to 1 week.
