Dark Chocolate Salted Caramel Bites

I love chocolate. I’m what one would call a chocoholic. Fully admit that one. HOWEVER, it’s not so easy making my chocolate loving spirit get down with my paleo and intolerance restricted lifestyle. BUT I’ve been obsessed with little chocolate bites of any kind lately.

So when I caught myself craving holiday turtles or something else gooey caramel goodness, I knew I had to find a way to make it work. Enter these Dark Chocolate Caramel Bites. Super simple, super satisfying. Wham Bam, Thank You Ma’am.

Recipe:

  • 1.5 cups dates

  • 1/4 cup tahini

  • 1/3 cup dark chocolate (no dairy/raw to make it vegan)

  • 1 tsp coconut oil

  • 1 tsp pink Himalayan salt

How To:

  1. Soak dates for 10 minutes in a bowl filled with boiled water. Drain, pressing excess water out with hands or paper towel (I like getting a little messy in the kitchen)

  2. Blitz down dates in food processor until a paste starts to form. Add in tahini and  1/2 tsp of salt, pulse until smooth

  3. In a double boiler, melt down chocolate and coconut oil.

  4. On parchment paper lined tray add coin sized rounds of melted chocolate to form a base for the bites. Freeze 10 mins.

  5. Add 1 tbsp of caramel mixture to each round. Freeze for 10 mins

  6. Using a fork, dip the chocolate caramels into the melted chocolate to lightly coat. Sprinkle each bite with salt and put back on parchment paper tray to set in freezer. Freeze 1 hour.

  7. Enjoy!
