Watermelon Feta Mint Salad

Looking to beat the heat this summer? I love love love watermelon — I mean, who doesn’t?? I think it’s just so fresh and should totally be the star of the show more often at meals. I adore different types of salads in the summer since it’s just so light but satisfying in the warm months.

I was looking for a light yet flavour packed side to pair with my bunless burgers this week and I remembered this super simple side. This one is perfect to bring to barbecues, wow a date, and stay on track with your goals.

Ingredients:

  • 2 cups of watermelon, cubed

  • 1/2 cup mint

  • 1/2 cup of goat or sheep feta

  • 2 tbsp balsamic glaze

  • 1/4 cup finely sliced red onion

  • pink himalayan salt & pepper to taste

How To:

  • Rip off mint leaves from stem, tearing large leaves in twos or threes

  • In a mixing bowl, combine all ingredients except for balsamic glaze together gently.

  • Divide amongst plates, top with balsamic glaze drizzle (roughly 1 tbsp each) -- Enjoy!

I hope you all like this recipe, I’ll be adding more and more quick and flavourful sides throughout the summer, so keep sending your suggestions for my healthy twists!
